A specialty of Brittany, France, crêpes are enjoyed for both sweet and savory treats. Traditionally, froment batter, made with wheat flour, creates light and delicate crêpes perfect for sweet fillings like preserves and chocolate. In contrast, blé noir (or sarrasin) batter, crafted with buckwheat flour, yields a heartier crêpe with a touch of nuttiness, ideal for savory fillings. Interestingly, buckwheat, despite the name, is related to rhubarb and is naturally gluten-free!

We craft our breads using time-tested methods from traditional French recipes. Each loaf is an artisan creation, made with high-quality ingredients. Our breads are leavened with slow-fermented dough and/or levain (French sourdough). This traditional approach unlocks a deeper flavor profile and aroma, while also breaking down some of the gluten for easier digestion. The slow rise also strengthens the dough, leading to a beautiful rise and a satisfyingly light and airy crumb. These artisan breads are more than just sustenance – they're a delicious and delightful taste of tradition.
